This weekend was two of my best friend’s birthdays. One Saturday and one Sunday. Because they both fell on a weekend day in the summer, there were a lot of outdoor, sun activities planned.

On Saturday we had a beach day with all of the traditional beach day food. We brought a grill and made burgers, kielbasa, macaroni salad, Doritos, and all the snacks you could think of. The weather forecast was that it was supposed to rain all day, so when I went to Kroger at 6 am to get all the supplies, I was sure that we would be making them at someone’s house, pretending we were sunbathing in the sand.
However, luckily, they were wrong. I mean…they are usually wrong, so I should have known! But we got to spend the entire day at the beach in the sun.
On Sunday, we were having a boat day. Boat food is harder. We don’t have a grill, but we were going to be out alllll day and definitely needed sustenance. Someone usually stops for bagels in the morning and someone else usually brings lunchmeat and bread to make sandwiches for later.
Like the beach day, we usually have chips and other store bought snacks for the day as well. But since it was a big birthday weekend, I wanted to bring along some appetizers that would spice up the day and make it feel bougier (I doubt that’s a word).
In the past, I have made caprese salad skewers and thought skewers would make a great boat food. You can just grab the stick when you need/want a snack.
Sunday was my friend Kristen’s birthday, so I wanted to choose ingredients that I knew she liked. I picked up tortellini, tomatoes, stuffed green olives, pepperoni, and mozzarella balls.
The only thing that needed to be cooked was the tortellini according to the instructions. You definitely do not want to let them cook for too long though! You need a little bit of rigidity in the noodle to make sure they have structure on the skewer and doesn’t just fall off.
I set up all of the ingredients in a line, got out the skewers and started putting different ingredients on the stick.
Other than making sure I had an equal distribution of ingredients on each skewer, I did not have a specific order in which I loaded the skewers.
I was talking to my friend on the phone, grabbing and filling up the sticks until all of the ingredients were gone. I was surprised when I was done so fast because it was a mind-numbing process.
I would recommend also bringing a bottle of balsamic glaze (premade) so people can drizzle it on. Most people didn’t get the balsamic glaze because I was handing them sticks while they were floating on rafts in the water…I thought that would get messy! But it sure did taste good both ways.

This appetizer was really a hit. It looked so bougie (just what I was going for) but it was so simple! Other than boiling the tortellini, it took my about 15 minutes!
I didn’t put a recipe in this post, because it’s so easy to pick different ingredients based on your taste. For example, I picked out blue-cheese stuffed green olives and my sister-in-law is allergic. Whoops! They have so many other options for olives it’s endless.
