As it gets more and more into the summer, I realized how much more appetizers I am making and eating. With the sunshine comes more little get togethers, beach days, and boat days. There are many days where I do not have real meals but just snack on appetizers made by me or my friends and families.  

Those are the best days. Drinking and snacking all day with good company, good food, good drinks, and not a care in the world. 

This past weekend was my best friends birthday. We had plans to spend the day on her parents boat and I wanted to make her an appetizer that I knew she would love. She is pregnant, so bringing her drinks doesn’t really cover it anymore lol. 

She really doesn’t like spice but she notoriously loves buffalo chicken. I needed to make it a finger food that people could grab on the boat or I could throw to them while floating in a raft on the water.

I thought I could attempt to make buffalo chicken pinwheels. I picked up chicken, cream cheese, mild buffalo sauce, green onions, and tortillas. 

I woke up nice and early and started boiling water for the chicken. I wanted to shred it for this recipe, so that is the easiest way, I think. Once the water boils, I put the chicken in and set a timer for 10 minutes. These were pretty thin chicken breasts, so that seemed to be enough time. Thinner the better when boiling and shredding chicken! I have learned that the hard way!

Once complete, I added shredded chicken to a bowl and put the entire 8 ounce cream cheese package to the bowl. In order to mix well, I put the mixture in the microwave for 45 seconds and mixed. 

I think I am a broken record saying this, but I LOVE recipes that use as few dishes as possible. This is one of them. One pot to cook the chicken and one bowl to mix everything together. 

After the chicken and the cream cheese are mixed together, add and mix the buffalo sauce. In my recipe below I have the amount that used, but “measure with your heart” as they say. It really depends on your spice level. Make sure not to add too much, as the chicken mixture cannot be runny when put in the tortillas.

Once the mixture is ready, lay out a tortilla and make a layer across the entire tortilla, making even with a fork.

Remember not to fill this very thick as you will be rolling this. Start from one side of the tortilla and roll like you would to put away a sleeping bag (it’s the best analogy I could think of lol).

The next step is very important. In the past, I have tried to make pinwheel sandwiches and couldn’t understand why they would fall apart when I start to slice the tortilla…you need to wrap the tortilla/chicken buffalo mixture in either plastic wrap or aluminum foil and place in the refrigerator for at least 30 minutes. If you are rushed for time, I have placed it in the refrigerator for  15-20 minutes and had the same results.

Above is what the final result was after slicing. I recommend slicing at least an inch or so apart so they have structure when people grab them off the plate. 

This ended up being a great appetizer for the boat. It was definitely a hit and I think my friend appreciated a birthday appetizer instead of a drink this year.

Buffalo Chicken Pinwheels

Ingredients
  

  • 2 ea Burrito Size Tortillas
  • 1 lb Chicken Breasts Thinner speeds up boiling process
  • 8 oz Cream Cheese
  • 4 fl oz Buffalo Mile Wing Sauce
  • 3 stalks Green Onion

Instructions
 

  • In a medium pot, fill 3/4 the way will water and bring to a boil
  • When boiling, add chicken and let boil for 10 minutes. Timing depends on how thick the chicken is. Make sure to keep checking until all the pink is gone
  • Using 2 forks and shred chicken
  • Add to bowl with 8 oz of cream cheese block
  • Microwave for 45 seconds and mix
  • Add buffalo wing sauce and mix
  • Chop green onions, add and mix
  • Lay out tortilla and spread mixture on one side with fork, making sure it is even throughout
  • Roll up tortilla
  • Wrap with aluminum foil or plastic wrap and place in fridge for 30 minutes
  • After 30 minutes, unwrap, and slice into 1" sections
  • Serve
