Honest question for those of you out there that are single and live alone: what do you do every night when you get home from work? Maybe it is because of the pandemic, but a few nights during the week, I am so bored. I usually end up scrolling threw TikTok in bed…until it is time to go to actual “bed.”Â
Don’t get me wrong, I have friends and family that I hang out with but because of the pandemic I think it became the norm to spend less time with each other. I started this blog to give me a hobby or something to do lol. Writing that down makes me sound so lame! But it is what it is.Â
Last night was one of those nights for me, so I decided to cook and document my dinner. I love cooking and when I don’t have a recipe in mind, it’s actually very therapeutic. Sometimes I will be cooking for like 30 minutes before I realize it is complete silence in the room and I should probably turn on the TV or music. I can get lost in the creativity of cooking.
I had some ground turkey and veggies in my fridge, so I decided to make salad jars. I went through a time when I would meal prep salad jars every single week. A few years ago they were everywhere on Pinterest and I was right along with them. I even bought pretty jars for them.Â
After starting to brown the turkey, I decided to turn on a true crime Youtube video. I am one of those stereotypical girls who can listen to true crime all day long. Dateline NBC’s podcast at work and then different Youtube video’s when I get home. I love Kendall Rae’s channel and lucky for me she had just posted a new video. In this video she was telling the story of the murder of Donnah Winger.Â
If you have never heard of it, it’s a very interesting, very sad story. Police received a phone call from her husband one night and he was hysterical saying how her wife had a stalker and he had broke into the house to kill his her and the husband in turn killed the stalker by shooting him. To the police, it seemed like an open shut case. His wife did have a creepy encounter with this man prior. He had driven her and her daughter home from the airport and said creepy things and she was fearful for her life.Â
He had beaten her with a hammer before being shot by her husband. For years this was what everyone thought happened…but turns out it was not. It was almost the perfect murder by the husband…but he did eventually get caught. If you are interested in watching the video, here it is:Â

Now that we talked about sad, morbid stuff…let’s get to the food. Taco salad.
Until recently, I would always buy the 89 cent taco seasoning packets from the store. A month or two ago, I wanted to make tacos and realized I had everything but the seasoning for the meat. Why didn’t I just buy the bigger one so I always had it on-hand? I don’t know…but I do keep one in my cupboard now.Â
After adding the taco seasoning according to the instructions on the container, I cut up some cherry tomatoes and rinsed the black beans.Â
There wasn’t much prep or cooking in these salad jars. The real key that you need to remember is how you are going to layer. It is so important to put the “wetter” ingredients on the bottom of the jar so the lettuce does not get soggy.Â
Since this was a taco salad, my first ingredient for the bottom of the jar was salsa. I would be using that instead of a salad dressing. Below is how you should layer the ingredients.Â
- Salsa
- Turkey
- Black Beans
- Tomatoes
- Lettuce
- Jalapeno Toppers
Salad jars are nice too because once you go to eat them, you flip them over and dump them out and it’s in the correct order on your plate. I had one for lunch at work the next day and it was yummy. Let me know if you try this or if you suggest any salad jar recipes for me to try!Â

Fiesta Taco Salad Jars
Ingredients
- 1 lb Ground Turkey
- 2 tbsp Ortega Taco Seasoning or equivalent (follow instructions on package)
- 6 ea Cherry Tomatoes Halved
- 4 oz Black Beans (rinsed)
- 2 Handfuls Baby Spring Mix
- 1 Handful Crispy Jalapenos
- 3 tbsp Salsa of your choice
Instructions
- Warm up skillet and start cooking ground turkey
- Once browned, follow the instructions on the package for seasoning
- Cut tomatoes
- Rinse and drain black beans
- Start layering jar. First add the salsa to each jar
- Section the meat into quarter sections in the pan and distribute into each of the 4 jars
- Add black beans to each jar
- Add tomatoes to each jar
- Add Spring mix. You will need to really stuff this in the jars
- Top with crispy jalapenos
- Close lid and do not shake
