As much as I love cooking, there are several areas I haven’t dabbled in yet. One being salad dressings. While I love a good salad, whenever I get done chopping all the veggies, compiling all the ingredients, etc…I am not in the mood to pull out the Nutribullet and combine ingredients to the right consistency when you have a simple option in the fridge. However, I vowed in 2021 to get a little less lazy and try.

More Healthy Recipes: Fiesta Taco Salad Jars!

It was the weekend and I didn’t have much to do, so I thought this would be the perfect time. If you have read some of my other blog posts that include recipes, you probably know that I am a spice girl. Spicy food should be it’s own category of food, in my opinion. When thinking about trying out salad dressings, spicy  was naturally on my list.

I wanted to start small. Three healthy ingredients. I took some Greek Yogurt, jalapeno’s, lemons, and of course, salt. I played with this combination over and over again and ultimately came up with the right ratio that honestly was yummy. Spicy, yes…but yummy.

Spicy Jalapeno Dressing:

  • 1 cup Greek Yogurt
  • 2 Jalapenos
  • 1/4 of Juice of a Lemon

I like my dressing a little thicker, so this ratio worked for me, but if you need to add more lemon juice, that should thin it out. It’s SO simple, healthy, and delicious.

I think this dressing could work for a variety of different types of salads, but I used it on a chicken, veggie salad.

If you try it, let me know what you think below!
