You know when you decide to make shish kabob’s or an appetizer that requires you to buy skewers…so you buy some and then you have them for the next 2 years because they are sold in packs of 50?? That’s me right now. I bought skewers for a previous recipe (see here) and boat day a couple weeks ago and now I am committed to creating recipes that requires skewers. I am vowing to use these before the 2 years! lol

Like my Tortellini Skewers recipe, this one is also super simple and does not require a lot of prep time. I was making these for a snack to have on a boat day over the weekend. It was supposed to be almost 100°F, so I wanted a tropical/vacationy vibe. 

The last tropical/warm vacation that I went on was in 2019 before the pandemic hit. We went to Hawaii and it was my first time there and I LOVED it. There was something about the blue water, palm trees, and breathtaking views that differed so much from the Caribbean waters that I had been used to seeing.

Since Hawaii was the last warm vacation I had been on, I decided to get inspiration from there for my skewers. I think the first thing that we all think of when we think of Hawaiian food is pineapple…so of course, this recipe includes pineapple. Spoiler Alert! 

Next, I think of poke bowls butttt as much as I love sushi, I was going on a boat with a pregnant friend and people who don’t love raw fish. Hence why I chose cocktail shrimp and built from there. 

This appetizer requires no cooking. I like to just set up a little station along my bartop with all of the ingredients.

You will need: 

  • Pineapple (peep my great deal)
  • Cocktail Shrimp (dethawed)
  • Polish Sausage, sliced (okay not very Hawaiian, but I thought it went well) 
  • Mozzarella balls
  • 8″ Skewers (try these from Amazon)

The only prep beforehand is to place the frozen shrimp cocktail in the refrigerator the day before to defrost and to slice up the polish sausage. For the sausage, I suggest 1/4″ thick or so. You don’t want them too thick as they are just bite size snacks and may take up too much room on your skewer. 

There is no rhyme or reason on how you should layer these. I like to go down the line and start back at the beginning if I have room, but you could always cater yours to what people like the best. Maybe you want a ton of shrimp and not much sausage on some of them. There are no rules. EXCEPT…if you are not serving these right away, be aware of where you are placing the pineapple. If you wait a few hours, the pineapple will breakdown the shrimp and sausage and make them a bit soggy. The acidity from the fruit will definitely start to affect the crispiness of what is next to it. 

These turned out to be a hit on the boat and plan on making them again. Let me know if you try them! 

Hawaiian Skewers

Course Appetizer
Cuisine American, hawaiian

Ingredients
  

  • 14 oz Polska Kielbasa (polish sausage)
  • 30 pcs Cocktail Shrimp defrosted
  • 30 Fresh Mozzarella Balls
  • 5 oz Pineapple I bought precut, but could slice whole pineapple
  • 15 Medium Sized Skewers (8")

Instructions
 

  • The day before, place shrimp into refrigerator to defrost
  • Day of, slice polish sausage into 1/4" thick slices
  • If using a whole pineapple, slice into small triangles about 1/4" thick
  • Lay out ingredients on counter
  • Build skewer by going down the line of ingredients until entire skewer is filled. You may need to go back to the beginning and continue to add.
  • Keep cold and serve immediately!
