This year I want to start experimenting with foods from different cultures and one that I have very little experience with is Indian cuisine. Being Irish and Italian, my comfort zone sits right between sausage, potatoes and big pasta dishes.
Since the pandemic started, I have ordering my groceries to get delivered, usually from Whole Foods. When “grocery shopping” one day, I came across a Tikka Masala sauce that looked fun. I decided to try and put a dish together that used the sauce.Â
I had some chickpeas I wanted to use up, so I ordered some rice, veggies, and was excited to see how my dish came out!Â

I am on a somewhat of a health kick right now (I mean, it’s January…who isn’t?), so I did some research on what the healthiest rice is. Upon my research, I learned that black rice is the most healthy rice for you and I have to be honest, I have never heard of black rice. It supposedly contains the highest antioxidant activity, contains more protein, among many other health benefits. Sooo…I added it to my Whole Foods order and tried it out.
I started with heating up a large frying pan and throwing in the olive oil and minced garlic to sauté for about a minute. I then added in the diced up white onion to simmer until starting to turn brown. I am starting to really love the flavor and texture that onions give to a dish.Â
After the onions start browning, throw in the carrots and the chickpeas and let simmer for about 3-4 minutes. I then added in that tikka masala sauce I found and like simmer for another 8 minutes to get everything nice and marinated together.Â
This was a super simple recipe that I am sure you didn’t need my guidance for, but I am hoping it inspires people to try new cuisines and use ingredients they may not have previously thought of!Â
I had it for lunch today and I was pleasantly surprised by the concoction! With new elements like the sauce and the rice, I was honestly, worried!

Vegan Chickpea Tikka Masala
Ingredients
- 1/2 ea White Diced Onion
- 1 Pinch Minced Garlic
- 1 Splash Extra Virgin Olive Oil
- 15.5 oz Chickpeas, drained
- 8 oz Sliced/Grated Carrots, pre-cut
- 16 oz Mayura Organic Tikka Masala Sauce (2 jars)
- 1 cup Black Rice, dried
Instructions
- Using a large frying pan, heat up olive oil
- Add diced onion and minced garlic
- Let simmer for a few minutes until starting to brown
- Add Chickpeas, drained
- Add carrots and allow everything to simmer for 3 minutes
- During this time, I start to make the rice and follow the instructions on the package
- Add both jars of the Tikka Masala Sauce
- Let simmer for 8 minutes.
