I think everyone has heard of the Viral TikTok pasta that has been blowing up the internet recently. It’s simple and looks so delicious. It started a major internet trend of everyone trying it, tweaking the recipe, and giving their take on it. I decided to do the same…trying the recipe but put my own spin on things.

If you have read any of my other blog posts, you may have seen that I have a “Vegan Recipes” section. I want to put a disclaimer, that I am not vegan. Because I have endometriosis (a hormonal disorder), I sometimes try and limit the amount of hormones (i.e. animal products) that I consume. However, I am not fully committed full time. 

That being said, I wanted to put a vegan spin on this viral recipes because I know so many people out there are vegan and want to participate as well.

The main ingredients in the original recipe are cherry tomatoes, a block of feta, and noodles. I decided to use a cherry tomato medley, onion, bell pepper, basil and vegan feta cheese. My favorite vegan feta cheese is by Violife (http://www.violifefoods.com). I can find this at my local Whole Foods through Amazon.

The great thing about this recipe is that everything gets thrown into a casserole dish at once and thrown in the oven. I added the cherry tomatoes, half a diced onion first. P.S. If you don’t own a vegetable dicer, you need to get one immediately. It makes the time it takes to dice the veggies (which is my least favorite part) drastically shorter.  

I wanted to include a picture of the one that I use here, but when I tried to find it on Amazon, the closest one I could find was by the brand, Zalik. Amazon Onion/Vegetable Dicer by Zalik

You just push the top down, and it instantly dices the onion. 

Just like the viral video, I added the vegan feta cheese block to the middle of the casserole dish, added olive oil, spices, and half a diced orange pepper to make it have more nutrients. I had preheated my oven to 350° F and baked it for 45 min-1 hour. 

I was wondering if the vegan feta cheese block would melt as good as normal cheese and O.M.G. it did and it looked SO good. 

While this was baking, I boiled some water and made a box of rigatoni noodles. I ended up only adding half the box to the casserole dish with a 1/4 cup of saved pasta water. 

I added it all together, mixed, topped with basil and red pepper flakes. I let it sit for about 10 minutes to let the sauce thicken. It turned out so yummy! I am thinking of making it again with some Banza! Chickpea noodles to get more protein.

TikTok's Viral Feta Pasta- Vegan

Vegan take on TikTok's Feta Pasta recipe

Ingredients
  

  • 12 ounces Cherry Tomatoes
  • 8.1 ounces Violife Vegan Feta Cheese
  • 1/2 Yellow Onion
  • 1/2 Orange Bell Pepper
  • 8 ounces Rigatoni
  • 1 tsp Olive Oil
  • 1 tsp Crushed Red Ppper
  • 1 tsp Italian Seasoning
  • 1 tsp Minced Garlic
  • 2 leaves Basil
  • 1/4 cup Pasta Water

Instructions
 

  • Preheat Oven to 350°F
  • Rinse and add Cherry Tomatoes to a 9" x 11" casserole dish
  • Dice Pepper and Onion and add to casserole dish
  • Place Vegan Feta Cheese in center of casserole dish
  • Drizzle olive oil over entire dish
  • Sprinkle all of the spices except the crushed red pepper to dish
  • Put in oven for 1 hour (check at around 45 minutes). Tomatoes should have "popped" and cheese fully melted.
  • While in the oven, cook pasta according to the box instructions.
  • Drain and save about 1/4 cup of the pasta water for later.
  • After 1 hour, take dish out of oven and add noodles
  • Add pasta water and mix together
  • Add crushed red pepper and chopped basil
  • Let sit for sauce to thicken for about 10 minutes
  • Enjoy!
